Like happy animals? Like coconut milk?
I get so many unbelievably odd press releases in my email. Some publicists just don't understand why I don't care that their steakhouse in Texas has a new head chef or that a chainsaw sculptor is working on the world's largest sculpture of Paul Bunyan ever made out of cheese. Seriously. But sometimes, I get really fantastic press releases that totally make me smile. Today was one of those days. Here's the deal. The fine folks over at Turtle Mountain (producers of some awesome vegan ice cream) are teaming up with the even finer folks of Farm Sanctuary to raise money to care for rescued farm animals and to support their (incredibly effective) legislative and investigative campaigns in support of farmed animal welfare. If you've been reading for a while, you might note that Farm Sanctuary is one of the non-profit organizations that I have personally volunteered for and vouch for. So, if you like happy animals and you like coconut milk, go out and grab some So Delicious Coconut Milk (it comes in three flavors: unsweetened, original and vanilla). Drink it, then send the UPC to Turtle Mountain at the PO box address listed here. For the cost of a stamp, you'll raise $1 for Farm Sanctuary. Heck, go out and buy two cartons of coconut milk. Vegetarian pate recipes
Sometimes, you just have to wonder how some food traditions came about. Extra fatty meat, pureed and spreadable (also known as pate) is one of those that just make you wonder why. No need to cram your arteries with fatty liver - try a vegetarian pate made from mushrooms, nuts and fresh herbs instead. You can keep it a bit chunky, like a dip, or puree it smoother and mold it however you'd like. How to stop worrying about salmonella and love the egg replacer
Are you worried about salmonella? Sure, all the infected eggs have been safely recalled, but do you trust federal regulators to keep you and your family safe in the future? CNN doesn't. Cookies, cakes, and other baked goods rely on eggs for moisture and leavening. They're an important part of the recipe, and you can't just leave them out. For peace of mind, do what vegans have been doing for years: try egg substitutes. A commercial egg replacer costs about $4 at the market, and will last for ages. I usually use Ener-G brand, and it's the most popular amongst egg-free bakers, but Bob's Red Mill brand works well too. If you're used to eating scrambled eggs for breakfast, have you thought about scrambled tofu? It's just as quick to prepare, and, if you add some seasonings and a bit of turmeric for color, you'll likely hardly know the difference. Many grocery stores even offer a product called "Tofu Scrambler" that you can just mix in with your tofu to make a scramble, if you're not the type to keep individual seasonings on hand. Back-to-school bars
Even if you aren't baking for the kids, homemade granola bars or breakfast bars are a healthier choice than sugary cereal, and, of course, they're perfect for eating on the run, if you've got to go! I admit, when I make cereal bars, I munch on them as a snack, rather than eating them for breakfast. Nothing wrong with that, though! Cranberry breakfast bars (Pictured) These whole wheat and oatmeal breakfast bars are flavored with cranberries and dates. Oatmeal Cereal Bars Use any kind of cereal you like to make these bars. There's plenty of maple syrup in this recipe, so while it's free of refined sugar, it's still quite sweet. Whole Wheat Energy Bars Sweetened with honey, applesauce and dried fruit, these bars are packed full of wheat germ and bran cereal. Healthy simple side: Coconut curried veggies
Need some help putting vegetables at the center of your plate instead of thinking of them as a boring, wilted side dish? These easy curried veggies won't let you down. Now, I know you're looking at the ingredients list and thinking "That's way too long. I'm not making that tonight, maybe on a weekend when I have more time." But really, this is a simple dish. It's basically a quick pureed sauce, veggies, a can of coconut milk, and lots of spices, so please don't be afraid to try it! Now, how to turn these veggies into a full meal? If you're not too hungry and want to keep it simple, try perhaps just some brown rice. Or cook up some quick couscous or quinoa, if that's more your thing. If you've got a bigger appetite, I'd add some baked tofu and a side salad, and call it a meal. Enjoy! Vegetarian Vietnamese food: Noodle salad, springs rolls and pho
Most people think of pho when they think of Vietnamese cuisine, but I think of spicy salads, fresh spring rolls packed with flavorful herbs and of course, thick black Vietnamese coffee. Lemongrass, green limes, red chilies, fresh cilantro and shallots combine to create a colorful cuisine that while similar to Thai food, has it's own unique history. My first trip to Vietnam, I was surprised to learn that because of the influences of French colonization, baguettes and cheese also factor into Vietnamese cuisine.
